Zuppa di lenticchie al curry

Non potendo più fare a meno di mangiare cibi caldi in pausa pranzo, e non avendo a disposizione fornelli a gas, elettrici o microonde, ho da poco comprato un thermos per ovviare il problema e dato il via alla preparazione di deliziose zuppe calde e fumanti da mangiare. E sulle note di Ex’s & Oh’s di Elle King si comincia…

INGREDIENTI

• Lenticchie 200 gr
• Patata 1
• Carote 4
• Zenzero qb
• Scalogno 1
• Spicchi di aglio 2
• Curry in polvere 6gr
• Sale qb
• Pepe qb
• Olio extra vergine di oliva qb

PREPARAZIONE

Prepariamo un soffritto con lo scalogno, l’aglio e lo zenzero e dopo qualche minuto aggiungiamo il curry in polvere. Tagliamo a dadini la patata e le carote, laviamo la lenticchia e uniamo gli ingredienti al soffritto. Versiamo circa un litro di brodo vegetale, portiamo ad ebollizione e cuciniamo a fuoco lento per circa 20 minuti, assicurandoci che gli ingredienti siano cotti.
